The Paris Catacombs: Episode 001

A Recipe for Bone Broth Soup provided by the Nevada Appeal:

Ingredients:

  • 2-3 pounds of bones (preferably a mix beef marrow bones, joints, neck bones, and knuckles)

  • 4 quarts of water

  • 2 Tbsp to ½ vinegar (to taste)

  • 6 cloves of garlic

  • 2 Tbsp. fresh ginger, sliced

  • 4 shitake mushrooms

  • Kombu (to taste)

  • 1-3 onions

  • 2-3 carrots

  • 2-3 celery stalks

  • Preferred spices

Directions

  1. First, put the bones, meat, water, vinegar, any spices, and all vegetables in a pot (stainless steel or glass will do).

  2. Let stand for 30 minutes.

  3. Bring to a boil.

  4. Skim the scum off the surface of the water, reduce heat, cover and simmer for at least 12 hours. The longer you simmer, the more nutrients that will be extracted from the bones and infused into the broth. Just don’t let it go past 48-hours

  5. Strain the soup, let cool and refrigerate.

  6. Freeze any broth not used after 7 days.
